
Chocolate Mousse

Ingredients
- 500g tub Meadow Fresh Chocolate Mousse
- 150ml Meadow Fresh Cream, whipped
- 6-8 tablespoons salted caramel sauce (recipe below)
- 6-8 teaspoons roasted cacao nibs or grated dark chocolate
Salted Caramel Sauce:
- 1 ¼ cups Chelsea Caster Sugar
- 125ml cold water
- 100g butter, diced
- 125ml Meadow Fresh Cream
- ½ teaspoon flaky salt
Method
- Place the Meadow Fresh Chocolate Mousse in a bowl and whip until smooth. Spoon into parfait glasses or dessert glasses.
- Dollop with Meadow Fresh whipped cream and drizzle over the salted caramel sauce. Finish with cacao nibs or grated dark chocolate.
Salted Caramel Sauce:
- Place the sugar in a wide, heavy-based saucepan and pour over the water. Place over a low heat and carefully melt the sugar. Increase the heat a little and allow the sugar to caramelise. You are looking for a dark caramel.
- Remove from the heat and whisk in the butter until melted. Stir in the Meadow Fresh Cream and flaky salt.
This caramel sauce keeps well in a covered jar in the refrigerator.
