
Flash Kiwi Dip

Ingredients
1 red onion, thinly sliced
1 tbs olive oil
2 tbs Balsamic Vinegar
1 tsp brown sugar
½ tsp salt
125g Meadow Fresh Sour Cream
125g Meadow Fresh Cream Cheese
¼ cup Italian Parsley, chopped
1 tsp soy sauce
Black pepper, to taste
Method
- Heat olive oil in frying pan and add thinly sliced red onions and salt. Sauté for 10 minutes until soft then add the Balsamic Vinegar and sugar. Sauté for a further 10 minutes until the onions are caramalised.
- Turn the heat off and add the cream cheese and sour cream to the pan. Stir until well combined. Remove from pan and allow to cool.
- Stir in the parsley, soy sauce and black pepper. Refrigerate until cold then transfer to a dip bowl and serve with crisps or as a steak sauce at your next barbecue!
